“Egg” Salad

I've developed an egg intolerance as I've aged, which has made me sad. I can still eat eggs in small amounts when they're an ingredient mixed in other things, but my days of eating straight-up eggs are over. No more soft boiled eggs or fried eggs for me, and most sad of all: no more egg salad sandwiches (insert most sad face emoji here).
I used to buy a tofu salad spread from the grocery store, which was a very pale imitation of my beloved egg salad. I finally decided to try making my own out of organic tofu, celery, mayo, honey mustard, green onions, salt, pepper and paprika. Guess what? It was a totally delicious success!
